If I was tied to a 2-ton weight, and bungee-jumped from a 1000-foot-high bridge, and cut the rope...?

Answer:
If you mean at the bottom before it is time to go back up - you would already have a few problems as when the bungee started to be stretched, your body would be trying to "slow down" the 2 tonne weight. Things might already be a little too late.
IF however you mean at the end of the free-fall period - where the bungee is still loose and not under strain - then if you cut the rope to the weight the drop would proceed perfectly as normal.
The reason is that until the bungee starts to go under strain/load from you and/or the weight, then whether you weigh 50kg, 150 Kg or 2150Kg, your accerlation is going to be the same (VERY minor air resistance excepted).
At the moment at the end of the free fall (just before the bungee takes some strain), there should be no tension in the rope between you and the 2 tonne weight - you are both free falling and accelerating equally. If you now cut the weight free - then as the bungee comes under tension, you will start to slow down and the weight will fall away from you.
